Your chef Darren Wolsey has increased his culinary skill and experience through time spent in some of the best restaurants around the world.


Starting in Cayenne, a Paul Rankin restaurant and then moving to the Lupino restaurant in Barcelona, Darren returned to Belfast and worked in Rankins fine-dining restaurant, Roscoffs.


From Roscoffs, Darren moved to L'Ecrivain, a Michelin-starred restaurant in Dublin and followed this up with a stint in Belfast's world-renowned Merchant Hotel before then spending time in Sydney, at the Aria find-dining restaurant.


The 2 times Michelin-starred La Becasse restaurant in Sydney was his next port of call.


Wolsey's now provides menus which take advantage of Darren's experience and the influences are clearly displayed on the menu and in the dishes Darren creates. A selection of dishes which show his western culinary roots as well as his Asian influences; some of the dishes blend both styles of cooking.
